What makes this oil high-polyphenol?+
Polyphenol concentration is determined by variety, farming practice, harvest timing, and processing. Koroneiki olives naturally produce high polyphenols. Traditional, low-intervention farming means the trees produce more protective compounds. Cold pressing within hours preserves them.
How does your count compare to other oils?+
The EU minimum for standard EVOO is ~100mg/kg. Most supermarket olive oil sits below 200mg/kg. Bryan Johnson's Blueprint requires 400mg/kg. Ours is 465.9mg/kg, independently tested by Eurofins Athens using LC-MS/MS — the most accurate testing method available.
How do I know it's genuinely high quality?+

What is oleocanthal?+
Oleocanthal is a secoiridoid compound found in high-polyphenol EVOO. It inhibits the same inflammatory enzymes — COX-1 and COX-2 — as ibuprofen. It is also responsible for the characteristic throat catch of fresh, high-quality olive oil. Our AOA result is 135.8mg/kg under COI methodology.
Can I cook with it?+
Absolutely — and it is delicious. Oleic acid is chemically stable under heat, so it holds up well in the pan. This oil is meant to be used generously, every day, on everything.
How long does it keep?+
For maximum flavour, and maximum health benefits use within 6–8 months of opening. Store in a cool, dark cupboard — not next to the stove. The opaque bottle protects from light, but heat will still degrade quality over time.
